Creemore Springs has a hit with its first IPA

Creemore Springs Brewery has brewed its first India Pale Ale (IPA) and it has proven to be very popular.
Brewmaster Kevin Clark said they haven’t been able to keep up with demand. Since launching in February, they have already sold more than they planned on making through all of 2019.
They are calling it a kinder, gentler IPA with all the flavour but a little lighter in alcohol content than a lot of the other IPAs that are on the market. Whereas others are usually between 6-7 per cent, Creemore IPA has 5.1 per cent alcohol by volume making it more approachable and more appealing for the masses.
What makes the IPA special, is the hops.
In developing the IPA, Clark said it took about six months working out the combination, settling on three varieties Amarillo, Mosaic and one so new it is still called X06277.
The result is bit of an east-meets-west in its style, said Clark. The western IPAs are known for being more piney, resiny, dark and boozy. The eastern style IPAs are light but quite hazy, he explained.
The Creemore IPA has the best of both with all the flavour in a light, crisp brew.
When brewing beer, the hops are usually added before it is boiled. Adding it afterward retains that hoppy aroma. Creemore adds hops before it is fired in the kettle and afterwards.
“It was really fun to develop,” said Clark. “This has been a classic lager brewery for a long time so being able to try our hand at a more avant-garde style, and make something that all the beer geeks on our team can be proud of, that was great.”
The IPA is part of the permanent Creemore Springs Brewery line-up so people can look forward to drinking it all year round, said brand manager Steph McLarty. She agrees, it’s perfect for drinking on the back deck, after a long day in the garden.

The deets:

Boundless IPA offers mighty hop aroma and flavours featuring mango, tropical fruits, melon and citrus.
Though big and complex across the palette, this remarkably balanced IPA is incredibly refreshing and approachable. A kinder, gentler IPA at 5.1% ABV. 45 IBU, it is available in 473-ml and 355-ml cans at select LCBOs, The Beer Store and at the brewery.
The hop profile: Amarillo (as a bittering and flavour hop in the kettle, adding subtle flavours of peach, melon and grapefruit).  Then there is two big charges of Mosaic and the hop X06277 for aroma in the whirlpool that give the beer notes of mango, pineapple, citrus and pine.
It is then dry hopped with a combination of all three to create this Boundless IPA.

    Hello to you. I’ve been enjoying beer in this fine country of ours for 50 plus years and believe me I have sampled many many of our fine beers over the years (and a few not so good ones as well). I recently discovered your Boundless IPA and it has quickly became my favourite pint to enjoy. I appreciate the lower alcohol content and the excellent taste that keeps me coming back for more.
