The Pine earns prestigious ranking

The Pine Restaurant, which recently opened on County Road 9 in Creemore, has been ranked Number 40 on Canada’s Top 100 Restaurants, a list judged by a panel of culinary enthusiasts, food writers and critics, chefs, restaurateurs and other food-service professionals.

The Pine’s 14- to 18-course tasting menu features locally sourced ingredients is inspired by chef Jeremy Austin’s travels through Italy, Hong Kong and Mainland China. Wife Cassie manages the restaurant with seating for 24.

According to the Canada’s Top 100 Restaurants website, frequently changing menus might include “the intriguing combination of chrysanthemum greens, black walnut, scallop fudge and moringa leaf, featured in a dish called The Breath. The dish Yu Xiang Qiezi offers a fascinating meld of roasted and fermented eggplant, albacore jerky, pickled turnip, egg yolk and wildflower honey.

“The majority of ingredients are regional, with most of the produce coming from a farm owned by Cassie’s parents. This emphasis on all things local extends to the concise but judiciously chosen wine and drinks program focused on Ontario.”
