Enjoy a touch of spring heat while BBQ sizzles

As usual, spring is bringing everyone out into the warmer weather.

Just reading through The Echo’s events listing shows so much going on – spring suppers, plant and garage sales, and an amazing number of book launches, readings and signing by so many talented local writers – you do not lack for interesting things to do in Creemore when spring seriously arrives.

I cannot wait for the Creemore Farmersʼ Market to finally open for the 2017 season. It’s a great time to meet up with local farmers and crafts people as well as friends you haven’t seen for a while.

Some of you know I had a bad fall late in March. Stephen and I were supposed to be away for the month of April on our dream vacation, but that has now been delayed until next year.

Now that my fractured kneecap and other injuries are finally healing, I am able to stump around a bit with the help of a cane and my “Robocop” leg brace, as well as resume my Creemore Dish writing.

Hopefully I will see some of you in town this weekend!

In past years when spring has finally arrived, I’ve usually focused on bringing you lighter fare – recipes with fresh asparagus, lemons, salady things and so on.

This year, I’ve been thinking about all things barbecue. Being stuck in a chair with my leg propped up gives a person a lot of time to think.  Sitting out on the deck, grilling up some serious meat and veggies, and enjoying a good appetizer while waiting for the barbecue to work its magic are high on the to-do list.

This recipe is one of our favourites and I have been making it for years.

Way back when, I was trying to replicate the ChiChi’s Mexican restaurant version.

While not 100 per cent spot on, I think I got pretty close.

Chili Con Queso is a great appetizer for family and friends to share. It’s quick and easy to make and gives just a “hit of hot” flavour provided by chopped jalapeno peppers, which you can adjust to your own taste or moderate the heat for your little ones.

So dish up a big bowl surrounded by your favourite taco chips to enjoy while the barbeque sizzles away.

And don’t forget – no double dipping!
